Long ago people gathered as a community to bake their bread in outdoor ovens. Ovens have evolved over time, but many have been constructed using materials such as clay, brick, and stone. The oven we are building is constructed mostly out of a mixture of clay, sand, and straw, on a block and stone foundation. Fire brick lines the inside surface where the baking is done. The layers of clay, sand, and straw are heated up by a fire lit inside the oven. When the fire has heated the oven mass, it is removed or pushed to the side, so the bread or pizza may be added.
"If the hearth is the heart of the home, ovens extend that out into the community", Kiko Denzer, 2007, author of "Build Your Own Earth Oven"
